Apple, Pear and Cranberry Crumble
Ingredients
- 2 cups peeled cubed apple
- 2 cups peeled cubed pear
1/2 cups. chopped fresh or frozen cranberries
1/2 cups sugar, divided
1/2 cups all-purpose flour, divided
- 1 tbsp. lemon juice
1/8 tsp. ground nutmeg
- 3 tbsp. butter, divided
1/2 cups reg. rolled oats
Directions
Preheat oven to 400oF (205oC).
In a 1 1/2 to 2 quart casserole, toss together apples, pears, cranberries, 1/4 cup of the sugar, 2 tablespoons of the all-purpose flour, lemon juice, and nutmeg until thoroughly combined.
In a small saucepan, melt 2 tablespoons of the butter. Add the oats and cook over medium heat, stirring constantly, until lightly browned. Stir in remaining 1 tablespoon butter until melted. Stir in remaining 1/4 cup sugar plus 2 tablespoons all-purpose flour until mixture is crumbly. Sprinkle over fruit mixture.
- Bake for 30 minutes or until hot and bubbly and topping is browned. Serve warm, cool or chilled.
Variations
- Replace the all-purpose flour with wholemeal flour to increase the fibre content and make it a bit chewier.
