Huevos con chorizo
Introduction
This is a wonderful breakfast, particularly after a hard night. It is soooo good. Not a bad evening meal either. Just eat it anytime.
Ingredients
Serves three or four.
- 400g waxy potatoes, like Disiree or Nadine, peeled (actually I rarely peel spuds) and cubed.
- salt
11/2 tbs butter
- 2 chorizo sausages thinly sliced. If you buy a packet of the smaller sausages in the supermarket use the whole packet.
- 4 eggs - free range is best.
- soft tortillas
- 4 tbs of your favourite salsa.
- 2 tbs chopped coriander or flat parsley.
Directions
Boil or steam the potatoes until almost tender. Set aside to dry.
Put the potatoes into a heavy pan with the butter over a medium heat. Cook for about fifteen minutes until lightly browned. Add the chorizo and cook for a further two or three minutes.
Lightly mix the eggs in a bowl with a little salt and then add to the potato mix and light cook the eggs and finally add the coriander.
Put a warmed tortilla on a plate, add as much mixture as you want, add salsa to taste.
