Introduction
This is a very tasty and quickly prepared dish. Preparation time 20 mins.
Ingredients
- 1 medium onion chopped finely
- 2-3 tbs olive oil
- 4 slices of bacon (or pancetta)
- 3 or 4 cloves of garlic crushed
- parmesan cheese grated
- 2 eggs
- 150ml cream
- fresh basil - about ten leaves or so
- spaghetti
Directions
Cook the spaghetti and while it's cooking:
Saute on medium heat the onions (three mins or so) and then bacon and garlic (another five mins or so) in the oil.
In a bowl lightly beat the eggs, add the cream and most of the parmesan.
Put the cooked spaghetti in a warm bowl and immediately add the egg, cream and cheese mixture. Stir it in and allow it to "cook" around the hot pasta.
NOTE: if you are worried about getting salmonella from the lightly cooked eggs tip the egg-cream-cheese mixture into the skillet and cook it there first. The sauce will be thicker and not as light.
Add the bacon and onion mixture and the basil to the pasta and leave to "cook" for five minutes. Sprinkle on the last of the parmesan and serve. Feeds 2-3.
