Spaghetti Puttanesca
Introduction
Serves 2.
Putta in Italian means a whore, and so accordingly, this is a very basic recipe and very good too! Serve with a salad, wine and good bread.
Ingredients
- 300 grams dried spaghetti. Organic is best, but not necessary, but I like the pasta that is 100% durham wheat.
- Some good olives.
- Some fresh herb(s). I use mostly basil, but anything you like will do ... parsley, marjoram, oregano etc.
- Extra virgin olive oil.
- Garlic, chopped finely.
- Some freshly grated Parmesan
- Salt and freshly ground black pepper
The quantities are up to you. Just do what tastes good. This is what cooking is all about.
Directions
Cook the spaghetti in lots of boiling salted water.
When it's cooked al dente (ten minutes) drain well and put on a serving dish then:
- Add some extra virgin olive oil and mix it in with the spaghetti
- Add the Parmesan, the fresh herbs and the garlic and mix
- Add the olives and mix
- Add the salt and pepper.
That's it. I told you it was basic, but, oh boy, is it good on summer evening when you don't feel much like cooking.
Variations
There are endless variations on this recipe. The simplest is just olive oil, garlic and salt and pepper. It's good too.
