Spicy Beetroot
Introduction
This is quite hot but very good served with any kind of meat.
Ingredients
- 1 kg beetroot, cooked peeled and diced
1/4 tsp chilli paste - actually how much will depend on paste and taste
- 1 tsp cracked black pepper
- 3 tbs malt vinegar
- 2 tbs brown sugar
Directions
- Combine all the ingredients except the beetroot in a medium saucepan and heat slowly until the sugar is dossolved. Add the cooked beetroot and continue until it is well heated through.

This really comes from another age when New Zealand was just "discovering" food. It is good though and not many people serve it now.
