Spicy Vegetarian Chilli

Yum, even dad likes this one. :-)

Ingredients

Directions

  1. In a soup pot, cook and stir the peppers, onion and a few sprays of fat free cooking spray on medium-high heat for three minutes.
  2. Add remaining ingredients except zucchini.
  3. Heat to boiling over high heat, stirring up ingredients with a wooden spoon.
  4. Reduce heat, cover and simmer for 30 minutes.
  5. Add zucchini to chilli, cover and cook for another 5-7 minutes, stirring occasionally until zucchini are tender.
  6. Season with salt and pepper to taste.
