Spicy Vegetarian Chilli
Introduction
Yum, even dad likes this one.
Ingredients
- 1 medium onion, chopped
- 1 small green bell pepper, seeded and chopped
1/4 cup sliced jalapeno peppars (i use the jar kind)
1/4 cup water
- 1 (15oz) can kidney beans, drained
- 1 (28oz) can diced tomatoes, undrained
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 medium zucchini, diced
- 1 (15oz) can black beans, drained
- 1 package baked tofu, diced
Directions
- In a soup pot, cook and stir the peppers, onion and a few sprays of fat free cooking spray on medium-high heat for three minutes.
- Add remaining ingredients except zucchini.
- Heat to boiling over high heat, stirring up ingredients with a wooden spoon.
- Reduce heat, cover and simmer for 30 minutes.
- Add zucchini to chilli, cover and cook for another 5-7 minutes, stirring occasionally until zucchini are tender.
- Season with salt and pepper to taste.
