Thai Sweet Chilli Sauce
Introduction
Despite it's name this is a sweet and sour sauce.
Ingredients
- 4 serrano chillies.
- 4 bird's eye chillies - you can sub both of these chilli for chilli paste. Not as nice but it works
- 1 cup sugar
1/2 cup white vinegar - rice vinegar ideally
1/2 cup water
- 3 minced garlic clovesd
1/2 tsp paprika
- 1 tsp salt
- 1 tbs fish sauce
- 1 fresh lime
Directions
Mix everything - except the lime and fish sauce - together in a heavy pan. (Why are they always 'heavy' pans?). Heat and stir continually until mixture is at a rolling boil. Turn down the heat and simmer until sauce starts to thicken. Take off the heat and add the fish sauce and the lime. Cool. It's best to refrigerate for a few days, but you can serve it when it's at room temperature too.
